If you can't be bothered playing the machines again and again and again to get the gambling achivements, just make sure you play every machine you come across a couple of times. Because some of the machines you'll come across are broken and result in you always winning. Hence you can keep playing those and get the achivement. Unfortunately the 'money' you win is useless in the game world.
